
Lately I’ve been experimenting with pasta recipe’s, I’ve been following some recipes online and i’ve been adding tweaks to them and re-inventing them. A friend of mine Emi shared one of her pasta recipes and was creative enough to infuse coconut water into hers. Here’s the recipe below.
INGREDIENTS
1. 200g Spaghetti
2. 200g Coconut milk ( 1-2 cups)
3. Seasoning cube
4. Curry and thyme
5. 2 Tbsp vegetable oil
6. Salt
7. 1 Cup diced vegetables (carrots, peas, bell peppers etc)
COOKING DIRECTION
-Start by adding pasta to boiling water and cook for 5 minutes, then strain and rinse under running water.

-Add coconut milk to a pot, add seasonings, spice, and salt to taste. Mix properly, add more water if necessary and allow to boil. Add in the pasta and cook until soft.
-While pasta is cooking, place a pan on medium heat, add oil, when hot saute onions until fragrant, then add the chopped veggies, a bit of seasoning and stir fry for about 2 minutes. Add cabbage last if using and stir for a bit.
-Now add the stir fried vegetable into the cooked pasta and mix properly on low heat.
-Turn off heat and serve.
