Asian Recipe: How To Make Savory Thai Shrimp Curry Sauce

Thai Shrimp Curry Sauce

When i have guests over and i feel like being extra and showing off Thai shrimp curry sauce is usually my go to recipe. Most times i make my guest aid me in cooking this dish because it’s quite fun and i also get to show off my culinary skills. You should also try this recipe.

INGREDIENTS
12 king/15 of medium size prawns
300ml of Coconut milk
2 tablespoons of olive oil
1/2 medium size of onion sliced thinly
1 teaspoon of minced garlic
1 tablespoon of fish sauce
2 tablespoons of fresh Coriander(cilantro)
1/2 cup chopped of spring onions
2 scotch bonnet sliced thinly
2 tablespoons of curry powder
1/2 teaspoon of thyme
1 chicken cube( optional)
 
COOKING DIRECTIONS
1. Clean and de-vein the shrimps if they havent already been de-veined.
Season the shrimp with the thyme, seasoning cube, salt, black pepper.

2. Also add sliced scotch bonnet and half of the spring onions. Mix and let it marinate for half an hour.
3. Heat the oil in a large non-stick frying pan or skillet over medium heat. Add the onions for a minute,. add the garlic and sauté for a minute then add the curry powder,. stir occasionally. This releases the curry flavor,. stir till the curry browns..Add the shrimps with the marinade stir and cook till the shrimps are almost done,. say three-quarters of the way.
4. Now take out the shrimps and continue to stir the curry.,The shrimps are taken out because we don’t want to overcook them otherwise they’ll go rubbery.
5. Now add the coconut milk and stir thoroughly,. let it cook for 5 minutes., then add fish sauce. Continue to stir and then Switch off the heat and allow the residual heat finish the cooking,. Add the prawns back into the pan. Add the rest of the spring, and then add the coriander and it’s done.
